Lycopene: The Tomato Antioxidant Studied for Clearer Arteries

Notably, healthy volunteers in the same study didn't show that change, which suggests lycopene may matter most where vessel function is already under strain (Gajendragadkar, 2014; PMC).

Picture the chain in one line. The tomato hands over lycopene, an antioxidant, and that antioxidant acts like a soft shield along the artery wall, steadying it against the everyday oxidation that wears a vessel over time. So yes, to the common question: tomatoes really are worth cooking to release their lycopene, not because raw tomatoes are bad, but because cooking unlocks far more of the pigment.
When you cook tomatoes, the heat breaks down those cell walls and frees the pigment. Add a source of fat and it rides into your bloodstream far more readily. In one study, people who ate tomatoes cooked with extra-virgin olive oil showed an 82% rise in one form of plasma lycopene, while the same tomatoes cooked without oil produced almost no change (Fielding, 2005; PubMed). Reviews of how the body handles lycopene point the same way: processing and dietary fat are what move it from "on the plate" to "in your blood" (Arballo, 2021; PMC).

So the takeaway is almost comically simple:
- Cook your tomatoes. A slow sauce, roasted tomatoes, or even good tomato paste beats a raw slice for lycopene you can actually absorb. A single tablespoon of tomato paste is one of the most concentrated everyday sources there is.
- Add a little olive oil. The fat is not optional here; it's what helps you absorb it. This is also why lycopene from food, eaten with a normal meal, tends to be handled well: it arrives with the fat it needs. A drizzle turns a tomato dish into a far better way to absorb it.
- Lean on real tomato foods. Cooked-tomato staples like a simple marinara are one of the easiest ways to make this a habit, not a project.
